Hello everyone! I apologize for the lack of posts lately. I spent the last three weeks fighting off a horrible cold that just wouldn't go away. I ended up spending a lot of time in the kitchen, so expect to see a couple of recipe posts throughout the next few weeks.
First up - carrot crust pizza. I was skeptical about making this at first because I wasn't sure how it was going to taste but I ended up liking it a lot!

Ingredients
- 6 medium carrots
- 2 garlic cloves
- 2 eggs
- Pizza sauce
- Mozzarella
- Toppings of your choice (I used vegan chicken strips, green peppers and onions)
- Tea towel or cheesecloth
Directions
- Preheat oven to 375 degrees
- Chop up carrots and place in food processor with garlic
- Blend carrots and garlic until finely chopped
- Place mixture into cheesecloth or tea towel (I recommend doing a handful at a time)
- Squeeze excess water out of carrot mixture (do this over the sink or else the carrot juice will stain everything)
- Place strained mixture into a bowl and stir in eggs (this is important because it keeps the mixture together while it bakes)
- Spread mixture onto lined pan
- Heat in oven for about 15 minutes or until edges begin to brown
Once the crust is ready, take it out of the oven so that you can apply the tomato sauce, mozzarella and toppings of your choice. Place pizza back in oven and let it cook for about five more minutes.
I recommend letting it sit for another five minutes to let the crust harden.
I'll be honest, this didn't really taste like pizza but it was very good. The carrot crust was super crunchy and very filling. The hardest part was straining the carrot mixture, but the rest of the recipe was very easy to follow. The only recommendation I have is to make sure you make the crust as thin as possible (about 1/2 a centimeter high) so that the mixture will hold together. Keep in mind the carrot mixture won't rise, so think of this as a thin crust pizza.
